P Penelitian ini bertujuan untuk menguji pengaruh variabel Service Perception terhadap Product Quality, Healthiness Perception terhadap Product Quality, Organization Perception terhadap Product Quality, Service Perception terhadap Product Quality yang dimoderasi oleh Government Regulation, Healthiness Perception terhadap Product Quality yang dimoderasi oleh Government Regulation dan Organization Perception terhadap Product Quality yang dimoderasi oleh Government Regulation dalam masyarakat menilai tentang kualitas dari street food. Variabel yang digunakan antara lain: Service Perception, Healthiness Perception, Organization Perception, Government Regulation, dan Product QualityData penelitian ini diperoleh dengan menyebarkan kuesioner kepada 195 responden yang pernah membeli produk martabak seacara langsung di street food. Teknik pengambilam sample yang digunakan adalah Purposive sampling. Alat analisis yang digunakan dalam penelitian ini adalah SEM (structural equation modeling).Hasil pengujian hipotesis menunjukan bahwa Service Perception memiliki pengaruh positif terhadap Product Quality, Healthiness Perception tidak memiliki pengaruh positif terhadap Product Quality, Organization Perception tidak memiliki pengaruh positif terhadap Product Quality, Service Perception memiliki pengaruh positif terhadap Product Quality yang dimoderasi oleh Government Regulation, Healthiness Perception tidak memiliki pengaruh positif terhadap Product Quality yang dimoderasi oleh Government Regulation, Organization Perception tidak memiliki pengaruh positif terhadap Product Quality yang dimoderasi oleh Government Regulation. Penelitian ini mendapatkan implikasi bagi para manajer vendor martabak untuk membuat membuat para konsumen dalam menilai kualitas dari street food tidak buruk bagi pandangannya, sehingga menilai street food masih layak untuk dibandingkan dengan restoran sepadan.

T This study aims to examine the effect of Service Perception variables on Product Quality, Healthiness Perception on Product Quality, Organization Perception on Product Quality, Service Perception on Product Quality moderated by Government Regulations, Healthiness Perception on Product Quality moderated by Government Regulations and Organization Perception on Product Quality is moderated by Government Regulation in the community assessing the quality of street food. Variables used include: Service Perception, Healthiness Perception, Organization Perception, Government Regulation, and Product QualityThe data of this study were obtained by distributing questionnaires to 195 respondents who had bought Martabak products directly on street food. The sampling technique used is purposive sampling. The analytical tool used in this study is SEM (structural equation modeling).Hypothesis testing results show that Service Perception has a positive influence on Product Quality, Healthiness Perception does not have a positive influence on Product Quality, Organization Perception does not have a positive influence on Product Quality, Service Perception has a positive influence on Product Quality which is moderated by Government Regulations, Healthiness Perception does not have a positive influence on Product Quality that is moderated by Government Regulation, Organization Perception does not have a positive effect on Product Quality that is moderated by Government Regulation. This research has implications for Martabak vendor managers to make consumers assess the quality of street food is not bad for their views, so assessing street food is still feasible compared to comparable restaurants.
